I tried this recipe for the first time when I had some leftover Gruyere cheese from my special holiday mac and cheese. I only make that mac and cheese twice a year because the recipe calls for a lot of Gruyere, and let me tell you, it is NOT cheap. So, understandably, when I ended up with leftovers, I was determined to find a recipe that I could use it in so it wouldn’t go to waste.
After searching for a bit, I found this Martha Stewart recipe and I was immediately sold. I mean, it’s Martha. I knew it would be good. I was even more on board knowing that the only additional ingredients I had to buy were frozen puff pastry and asparagus. I was anticipating that it might be harder than it was, but I was pleasantly surprised at how simple it was. When I pulled it out of the oven, I was SO impressed with myself because it looked so freakin’ fancy! I wish more people had been around so I could give in to the urge to yell “hey everyone! Come see the beautiful thing I made!” Then I tasted it. Oh. My. Goodness. It was beyond amazing.
Martha calls it an appetizer, but I most definitely ate it for my dinner that night. It was like a fancy asparagus flatbread. So if you’re looking for a delicious meatless dinner for yourself or a super delicious appetizer to impress your friends, look no further. For at least a minute, you will feel like Martha herself.
